Josh if you refash the ecu with stock injectors it should improve fuel economy.
When the car is in closed loop fuel with o2 sensor giving feedback the car would no consume more fuel.
The only way you can really effect fuel ecomomy here is that if you scale the injectors and latency times wrong to the point that you max out the fuel trims.

At WOT a stock fuel map is rich especially from 4500rpm and up.
At high rpm you generally see air fuel ratios rip into the 10s.
This is safe but robs power.
Thats why when people think after they put an exhaust and intake on their car that their car needs more fuel this is completely wrong. The fuel map has a lot of headroom in the first place and if you overfuel the engine even more you just rob power and make the car run slugish not to mention it will just max out your fuel trims because the ecu is constantly trying to take fuel away at low and cruising loads.
