Im a little confused on exactly what youre after; You mentioned 185/65/14 as standard and then "go up an inch on width and size", but then mention 8"?.
Regardless, 8" usually fits okay. It does however depend on the offset of the wheel, with 8"wide fitting okay for +25 up to about +35, without touching the guards.
Presuming the reason you care about how much you can change your wheel size, HERE is the link to all the state documents for modifications in Australia.
CE's have pretty huge wheel arches, so as Donki said, you can get away with an 8 inch wheel. Big thing to consider too is making sure you keep the tyre profile correct so that your tyre diameter matches from the old to new. This way your Speedo stays the same and final drive ratios are unaffected.
If you're engineering-ly minded too, you'd also consider the forces applied to the axle from a larger diameter and width wheel. I can't conclusively tell you that xx wheels will wear out your wheel bearing and ee wheels will shear off your wheel studs, but keep that in the back of your head before you put 10" wide wheels on 20 year old underloved axles.

So, new wheels = new tyres, especially if you're going for such a drastic change.
You've got an 8' wheel, which means you'll need a minimum of a 215 width tyre, best option being a 235 or 245. Now you have your tyre width you need to find a profile that will make the total diameter the same as factory. From a comparison site you can go 245/40 (+0.4%) or 225/45 (+1.8%).
The % difference is just how much difference there is from factory, ideally you have 0% difference but 15x8 doesnt allow for that, so your option is to have the Speedo read 0.4% under, or 1.8% under. Both of these are okay, not a huge change.
Personal recommendation is to find 15x6 wheels or similar as 8 is just a tad wide for no reason other than looks I presume. Hope this helps

Sorry to open this thread back up, but what’s your thoughts on 15x7? Considering running 205/50 or 215/50
